Yes, WordPress.org version 5.6+ is compatible with PHP 8.0. However, you should do a test to confirm that all your plugins and themes are compatible with PHP 8.0 and 8.1.

The good news is that if you find some plugins and themes are not compatible with PHP 8 or 8.1, you can always revert to the previous version of PHP without breaking anything.
